Afternoon Tea

If you are looking for a cooking project this weekend, this is the one for you! It took a while as I made everything from scratch (except the sausage meat), but it was worth it!

Scotch Eggs:

I whizzed 3 slices of brown bread & some mixed herbs in a blender to make breadcrumbs and boiled 6 eggs. I set up a little production line…plate of plain flour, sausage meat (which I rolled out in cling film), beaten egg then the bread crumbs. When the eggs were peeled, boiled and cooled I started on the messy but satisfying task…

Roll egg in flour, wrap egg with sausage meat, roll in beaten egg, roll in flour, roll in the breadcrumbs. Then repeat x 5

They went into a preheated oven at 180• for 25 minutes.

Sausage Rolls:

I made up a flaky pastry (available in recipes) and used some shop bought Pork & Leek Sausage meat.

After rolling out the pastry into an oblong, I cut into 3 strips and added the sausage meat.

I brushed one side of each strip and folded over to seal.

I then placed them on to a baking tray, cut into 2 inch (ish) sections and used scissors to make 3 little snips in each one. I then baked for 20mins in a preheated oven at 200•c.

Later on at tea time, I plated straight up onto a cake stand. I added some Prosciutto, crackers, chunks of cheese, Cherry Toms and Carrot Sticks.

My kids eyes nearly popped out of their heads when they saw this. After heavy scrutiny, my youngest asked what the ‘green bits’ were in the sausage rolls. I was honest (Leek). I reminded everyone of our pledge to try new foods (remember Tahlia’s tips) one nibble, two nibbles, three nibbles…GONE!

Mum point!! Yay – I’ll take that 👍🏻
