Quick and easy Spanish Omelette

This is perfect when you have one of those days when meal times just need to be easy. The fact it’s so delicious is another added bonus!

Beat 6 eggs and add a generous amount of your seasoning of choice.

Next up, peel and finely chop 5 good sized potatoes. Partly boil.

Once cooked, allow to cool for 10 minutes.

Heat a frying pan and then cover the base with sunflower oil. Once hot, add the egg and potato mixture.

Use a spatula to loosen the edges. Cook for 10 minutes until the base is golden. Place the pan under a moderate preheated grill until the top is cooked and remove from the heat.

Carefully turn out the omelette onto a plate (so the base is sunny side up). Leave to cool.

Serve with a nice crisp salad and enjoy.
